Eton Mess with Michael Harwood

It’s a recipe for Eton Mess – A very traditional English pudding that originates from the famous Eton College where Oscar Best Actor winner Eddie Redmayne was educated. The story goes that Eton Mess was first created when a meringue dessert was crushed by a dog whilst traveling to a picnic at Eton. All that could be salvaged was the crushed meringues, strawberries and whipped cream.

4 egg whites at room temperature
1 cup castor sugar
½ cup dark chocolate chips
2 cups whipping cream
4 cups of hulled strawberries

METHOD:

Preheat oven to 300°F

Whisk up egg whites and gradually add sugar until meringues is holding very stiff peaks. Fold in chocolate chips and spread mixture onto a cookie sheet lined with parchment. Bake for around 1 hour and then turn oven off and allow the meringue to cool completely.

Just before you wish to serve the Eton mess whip up the cream to soft peaks in a large mixing bowl. Crumble in the meringue making sure there are some large pieces still visible. Next, fold in strawberries and transfer to a serving bowl to serve.
