Easy Key Lime Pie Recipe from Priscilla Oliveras

Food is an important part of our familia celebrations here at Casa Oliveras. But even in our everyday life, everything involving mealtime—shopping for ingredients, prepping, cooking, and eating—is a big part of how we connect and spend quality time with loves ones.

So, it was no surprise that when my first daughter (the grandchild) was heading off for college, my mami decided to create a cookbook filled with some of our favorite recipes. Mami gifted each of her grandkids (nietos) a copy of her cookbook when they graduated from high school.

Of course, there’s a dessert section because…bueno…in our familia, we rarely turn down dessert. And while some of us enjoy baking—have you seen my girls’ and my made-from-scratch gingerbread creations come Christmas time?—we’re also fans of an easy recipe we can quickly whip up. Especially when it’s easy AND delish. Like this familia favorite that’s on our dessert table every Thanksgiving. It’s one that does double duty: delights our tongue and bellies AND reminds us of the years and good times when we lived in Key West.

Casa Oliveras Easy Key Lime Pie

Ingredients:

  • ¼ cup lime juice
  • 1 pkg (8 oz.) cream cheese
  • 1 Tbsp vanilla
  • 1 can condensed milk
  • 1 graham cracker crust
  • Whipped cream for garnish

Instructions:

  • Soften cream cheese.
  • Mix all ingredients with a hand mixer (leaving no cream cheese lumps).
  • Pour mixture into graham cracker crust.
  • Chill.
  • Add a dollop of whipped cream when serving.

Note: I’m not opposed to adding two dollops of whipped cream. 😉
