Recipes From Honey Creek

Piper loves to drink Cokes and eat snacks on the run. Her favorite recipe at the café is RaisinBread French Toast. She might even toss some chocolate chips on top.

Raisin Bread French Toast

  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 8 slices cinnamon raisin bread
  • Unsalted butter
  • Chocolate chips

  1. Add the eggs, milk, vanilla, cinnamon, and salt in a shallow dish and whisk until well combined.
  2. Dip each side of the cinnamon raisin bread in the egg mixture.
  3. Melt a little butter in a large skillet over medium heat. Cook the French toast until golden brown, about 2-3 minutes on each side.
  4. Add chocolate chips.

This next recipe for French Toast Sandwiches comes from Mallory Barnes at Book Club Bites.

French Toast Sandwiches

In case you aren’t feeling French Toast, try French Toast Sandwiches. Sweet cream cheese meets crispy bacon between two slices of French toast! You can’t go wrong with this breakfast treat!

A few pointers for the French toast sandwich:

  1. Make sure your baking pan is HOT and that you spray it liberally with Pam before you place the sandwiches onto the pan.
  2. Work quickly. Preassemble ALL the sandwiches you are making and have them nearby, along with the bowl of eggs, milk, and maple.
  3. Don’t oversoak the bread. Since you are going to work quickly, the speed will help you avoid oversoaking the bread. Just quickly dip each outer facing side of bread into the egg mixture and allow any extra to drip off.
  4. The cooking time will depend on the type of bread you use. A thicker white bread, like I use, should cook in about the same time. Wheat bread will take longer and thinner white bread will take less time.

Note from Mallory:

This sandwich is DELICIOUS. I couldn’t keep from taking several bites eating a whole sandwich before I took the pictures. This is definitely going on my menu of breakfast foods for the future.

And, even if you don’t love it, you will love this new, quick way to make French toast. The French toast comes out perfect, not soggy, which is my major complaint about French toast.
