Writing the Kitchen Witch series has me researching potions, teas, and spells from history but I’ve always thought that creating food and memories in the kitchen was the true magic that we can all bring to our lives. If we have the time.
Anytime you can get away with one bowl, one pan, I’m a happy baker. I don’t like having to run the dishwasher just to make a batch of cookies.
Instructions
- In a bowl, whisk together 2 1/4 cups flour, 1/4 cup granulated sugar, ¼ cup cocoa, and 1/2 teaspoon salt. Stir in a cup of melted butter. Press the dough into the pan, and bake 35 to 45 minutes.
- As soon as it comes out of the oven, shower the top with more sugar and be generous. Use a butter knife to cut the shortbread into bites in the pan while it’s still hot. Let cool, then break apart.
