A sure sign of autumn in our house? Pumpkin chocolate chip cookies! Once the first batch begins baking, we break out our decorations and welcome fall. You can almost see the leaves changing their colors in anticipations and celebration. They have become a favorite at tailgates, camping trips, trick-or-treating, school parties, office potlucks…you name it! They go great with milk, a pumpkin spice latte, chai tea, your favorite red wine or a seasonal beer. I hope you will enjoy these cookies as much as my family and friends have through the years.
*Warning* You cannot eat just one!
Chocolate Chip Pumpkin Cookies (Jamie Rae)
1 can of pumpkin (15 oz)
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups milk chocolate chips ~ (I add a lot more! )
Combine pumpkin, sugar, vegetable oil, and egg.
In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt.
Dissolve the baking soda with the milk and stir in.
Add flour mixture to pumpkin mixture and mix well.
Add vanilla and chocolate chips.
Drop by spoonful on greased cookie sheet and bake at 350 degrees F for approximately 10-12 minutes or until lightly brown and firm.
