Swedish Butter Cookies with Cate Masters

Cate Masters set her contemporary, Twice In A Blue Moon, beneath the northern lights of Sweden. While researching the country, she fell in love with everything about the setting, from the Icehotel to the Sami culture and their reindeer to the cuisine.

Swedes used to have a tradition of serving seven types of cookies to guests. Some of the recipes are difficult, but Swedish Butter Cookies are easy and delicious.

Bake: 25 mins per batch
MAKES: 36

INGREDIENTS:
1 cup butter, softened
1 cup sugar
2 teaspoons maple syrup
2 cups all-purpose flour
1 teaspoon baking soda
Confectioners’ sugar
Directions

Preheat oven to 300°. In a large bowl, cream butter and sugar until light and fluffy. Add syrup. Combine flour and baking soda. Gradually add to creamed mixture and mix well.

Divide dough into eight portions. Roll each portion into a 9 inch log. Place 3 inches apart on ungreased baking sheets. Bake 25 minutes or until lightly browned. Cut into 1-inch slices. Remove from pan and dust with confectioners’ sugar.
