Old South Pecan Pie with P.H. Turner

INGREDIENTS:

3 large eggs
2/3 cup of sugar
Dash of salt
1 cup of light corn syrup
1/3 cup of melted unsalted butter
1 cup of pecan halves
1 teaspoon of vanilla
1 unbaked nine inch pie shell

DIRECTIONS:

Preheat the oven to 350 degrees.
In a medium mixing bowl, beat together the eggs and the sugar. Add the salt. Whisk in the corn syrup and slowly add the melted butter and the vanilla. Gently stir in the pecans.

Pour into the nine inch pie shell and top with a pie crust shield.

Bake for fifty minutes at 350 degrees. Cool before cutting.

VARIATIONS:

Add two tablespoons of your favorite bourbon. (Or a tad more.)
or
Cover the uncooked pie crust shell with three ounces of semi-sweet chocolate. Then add the filling.
or
Put the bourbon and the chocolate in your pie!
