Clam Chowder with Nan Rossiter

INGREDIENTS

4 slices thick bacon, cut into ¼ inch pieces

1 large onion (chopped)

2 T unbleached all-purpose flour

3 medium Red Bliss potatoes (about 1.5 lbs.) scrubbed and diced medium

1 bay leaf

1 teaspoon fresh thyme or ¼ t. dried thyme (essential!)

2 T minced fresh parsley leaves

1 cup heavy cream or light cream (preference)

1 cup water

2 – 8 oz. bottles clam juice

4 (6.5ounce) cans minced clams (do not drain) or comparable amount of shelled fresh clams (can be found in the refrigerated seafood case)

1 cup water

Salt and Pepper to Taste

DIRECTIONS

In a large pot, cook bacon until crisp (5-7 minutes)

Add chopped onion to bacon; sauté until softened (5 minutes)

Add flour; stir until blended

Gradually whisk in bottled clam juice and water

Add potatoes, bay leaf, and thyme, simmer until potatoes are tender (about ten minutes)

Add clams with juice from can, cream, parsley, and salt (if desired) and ground pepper to taste; bring to simmer.

Remove from heat and serve.

Note: Can be taken to a Gin & Chowder party in a crock-pot set on low!
