Halia’s Sour Cream Corn Bread by A.L. Herbert

Ingredients   

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 3/4 cup white sugar
  • 1 teaspoon salt
  • 3 1/2 teaspoons baking powder
  • 2 eggs
  • 1 stick softened butter
  • 1 can cream of corn (8.75 oz)
  • 1 can drained whole kernel corn (8.75 oz)
  • 1 container sour cream (8 oz)

Preheat oven to 375. Generously grease a 12-inch cast-iron frying pan.

In a large bowl, combine flour, cornmeal, sugar, salt, and baking powder. Stir in eggs, butter, cream of corn, corn, and sour cream. Mix using an electric mixer at medium speed until well blended. Pour batter into prepared pan.

Bake in preheated oven for 25 to 30 minutes, until lightly browned, or until a toothpick inserted into the center comes out clean.
